Our Coffee

WHAT MAKES OUR COFFEE SPECIAL?

Cafe Welchez is grown and harvested in the scenic western highlands of Honduras, at a mountaintop "finca" – Spanish for plantation- just 20 miles from the world famous Copan Mayan Ruins. Our coffee is known for its critic notes and chocolate aroma. Besides our passion for coffee, there are other factors that help us produce this well-balanced cup.

Soil and shade:

Due to the amount of the rainfall we get annually, the soil has slight degree of acidity.  This promotes a good distribution of the coffee plants’ roots, which in turn retains humidity and facilitates oxygenation. Additionally we treat our soils with environmentally friendly fertilizers. The soil is also good for a wide variety of plants and trees, which provide shade to the coffee plants. Excessive sun can cause coffee beans to ripe prematurely.

Altitude:

Our Arabica beans grow in a 1000-1300 altitude. The higher the altitude, the finer the gourmet coffee will be. High altitudes cause beans to mature more slowly creating a harder, less porous bean.  Hard bean coffees have higher acidity, a quality that brings out the coffee’s greatest aromatic features.

Selection and farming:

 Trained pickers ensure that only ripe berries are selected at their optimal stage. Using wet mill processing, the bean’s pulp is removed within a strict time range after it is picked. Afterwards the beans are sundried.
